In her pre-kids life, Amy Knupp worked for two major metropolitan newspapers. Seven years in the business was enough to convince her that the corporate world wasn’t her happy place, so when her first son was born, she was lucky enough to quit her job and stay home with him.

Peppered Black Beans and Sausage

• 1 onion, chopped
• 1/3 cup water
• 1 teaspoon minced garlic
• 3 15-oz cans black beans, drained and rinsed
• 1 15-oz can tomato sauce
• 1 ½ teaspoons oregano
• 1 ½ teaspoons basil
• 1 teaspoon white pepper
• ¼ teaspoon cayenne pepper
• black pepper
• 6 sausages (or more)
• A dash or two of cajun spices (optional)
• 1 green bell pepper, chopped (optional)

Place the onion, water, optional bell pepper and garlic in a large saucepan. Cook, stirring frequently for 5 minutes. Add the remaining ingredients and cook over low heat for 15 minutes, sitirring occasionally. Serve over rice.
